When zucchini is plentiful, you sometimes run out of ideas for how to use it. Not any longer with these Italian-style zucchini fries that are delicious when served with marinara sauce.

- 1 lb zucchini, cut into “fries”
- 2 tbsp all-purpose flour
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 tsp dried Italian seasoning
- 1 tsp kosher salt
- 1/2 tsp black pepper
